Calling all Cooks!

Please, please leave me comments with any non-copyrighted recipes that you LOVE that you wouldn't mind us using in a cookbook fundraiser. i've got the software and i'm ready to start typing!

  1. Here's my Great Grandmother's pineapple upside down cake... the recipe is "rough" though, so bear with me.

    Preheat oven 275-300 degrees
    -Ingredients-
    1/4 C butter
    1 C Brown Sugar
    1 can crushed/cubed/slices pineapple (personal preference)
    3 eggs separated
    1 C sugar
    5 T fruit juice (you an use the juice from the can, I use lemon juice)
    1 C flour
    1 t baking powder

    -Preparation-
    1. Melt butter in 10" cast iron skillet
    2. Coat the bottom of the skillet evenly with the brown sugar.
    3. Cover brown sugar with pineapple. (If using slices, you may want to place a cherry in the hole of each slice)
    4. In a Medium or Large bowl cream the 3 egg yolks and sugar together.
    5. Add the fruit juice to the eggs and sugar.
    6. Add sifted flour and baking powder in to the egg, sugar, and juice mixture.
    7. In a clean bowl, beat egg whites to soft peaks, then fold them in to the other bowl.
    8. Pour in to the skillet and bake for 1 hour.

    -To serve-
    Let cool, then place a platter over the top of the skillet and flip over.

    (Hopefully this makes sense... it's just been a rough set of directions passed down, lol. Oh, and sorry for not having a picture, it's been a while since I've made it)
